NCSU

What it is

A Mediterranean perennial with prickly gray-green leaves, grown for its flower buds.

NC State Extension Β· PFAF

Why grow/eat it

The buds are a gourmet food. Plants give about 5–6 main heads a year from their second year.

PFAF

How to use it

Pick buds before the flowers open and usually boil them. Eat the base of each bract and the heart. Baby buds can be pickled or used in stews.

PFAF

Harvest in Houston

Harvest buds just before the flowers open.

PFAF

Container tips

Full sun, rich soil and plenty of moisture in the growing season. Wet winters cause more problems than cold ones.

PFAF

Cautions

Can cause allergic skin reactions (dermatitis) in some people.
